With food being a hot topic for many of my clients, I have decided to answer, or should I say, share a tip on one of the ways that cooking has been made easier in my home in recent times. I must admit I have, by no means perfected the art of food prep but this little bad boy recipe has certainly helped the cause. I will continue to search for tips and share them, as long as they excite me as much as this one has…

EGG MCMUFFIN (better known as the crustless quiche)

Ingredients (Basically anything you like but mine are as follows)

Eggs – 1 per muffin
Spring Onions

Chop and fry the onions, mushrooms, spinach, bacon, peppers, garlic and spices of your choice. Beat the eggs and add the fried ingredients, spring onions and a sprinkle of cheese into the eggs. Pour the mixture into muffin trays and bake in a preheated oven at 180°C for 20 mins. Allow to cool, remove from tray and eat away.

I love this recipe and idea because of how versatile the recipe is. You can add vegetables or meats that suit your tastes. They are amazing for breakfast and only require heating. They also taste AMAZING!!!
